Banana bread muffins

So, you have a bunch of bananas that are going browner by the day and you’re not going to be able to eat them all in time. Waste not, this sweet treat will solve your problem!

These banana bread muffins are easy and quick and best of all the kids will love them. Best of all these go perfectly with a cup of tea or coffee as well, why not give this recipe a go.

Ingredients

1 cup Caster sugar

2 Eggs

½ cup Sunflower oil

3 tbsp Natural yoghurt

2 cups Self raising flour

4 Bananas

Method

1 Preheat the oven at 160 degrees and grease a cupcake tray with a drizzle of oil

2 In a mixing bowl, place three bananas and mash into a puree.

3 In a separate bowl. cream the eggs, sugar and yoghurt together. Then add to the banana puree.

4 Sieve the flour into the bowl and slowly add the oil while stirring constantly. 

5 Pour the mixture into the cupcake tray making sure they are evenly distributed.

6 Slice the banana into slices and place them on top of the mixture. Eat the other half of the banana and then pop in the oven for 30 – 40 mins.

7 Try to Leave them to cool if you can before serving.
