Simply delicious fennel coleslaw

This is my favourite recipe for coleslaw, it is quick and easy to make and can even be made ahead of time. Fennel is a root vegetable with a beautiful aniseed flavour to it. The fennel adds a new depth of flavor to this creamy coleslaw and is bound to impress your guests at your summer bbq.

Ingredients

Half a white cabbage

1 Fennel

2 carrots

1 Bunch Spring onion

4 tbsp Mayo

1 tbsp Creme fraiche

1 Juice of a lemon

Method

  1. In a big bowl, add the mayo, creme fraiche and the lemon juice and mix well.
  2. Grate the carrots and finely slicing the cabbage, spring onion and the fennel. Be sure to keep the grassy tops of the fennel and put to one side for garnishing the finished dish. Add the grated and sliced vegetables to the bowl and give it a big mix. Season to taste.
  3. Lastly, tip into a serving bowl and top with the grassy bits of the fennel, and serve!
