The homemade jammy dodger is an iconic, English classic shortbread with a loving jammy heart in the middle. This will make your loved ones smile on valentines day. This recipe is just the tip of the iceberg as you can do so much with it. You could replace the jam with a chocolate spread (good vegan alternative here, this is not a sponsored or paid post, we just genuinely love this product!) or even add orange zest to the dough. We do recommend using a good quality jam, as your loved ones deserve the very best.

Ingredients

140g Plant-based butter, or Margarine (non-vegan alternative), at room temp 140g Caster sugar Either, 1 tbsp of flax seeds and 100ml of water or 1 Egg (non-vegan alternative) 260g Plain flour 2Tbsp Vanilla extract 90g Good quality Raspberry Jam

Method

  1. In a mixing bowl, add the margarine and the caster sugar and whisk until it becomes a silky smooth texture. Then add the egg and vanilla extract and whisk again so they are all combined.
  2. Add the flour and start mixing it in with a spoon. Once the mixture becomes a dough, then start using your hands. Cling film the dough and place inside the fridge for at least 30mins.
  3. While the dough is in the fridge, preheat the oven to 160 degrees. At the same time, line the two baking trays with baking paper
  4. Once the dough is firm, flour the work surface and roll the dough until it is 2cm thick. Get yourself a ring cutter (if you don’t have one of these, you can use a glass). Cut the dough and place it on the baking tray making sure they don’t touch. Half of the circles you can cut a love heart in the middle or a smaller circle(I used my daughter’s playdough cutter).
  5. Place in the oven for 15 minutes, or until golden. Make sure you keep an eye on them as they burn quickly. Once they are ready to come out of the oven place them on a drying rack to completely cool. I know it is tempting to have one right away, but trust me it’s worth the wait.
  6. Once they have completely cooled, start spooning the jam onto the biscuits without the holes in. Top them with the biscuit with the cutout shape in the middle. Repeat until all of them are gone.
  7. Finally, share these with your loved ones! This is a great way to share the love with near and far friends, family and loved ones as they can be boxed up and delivered as a gift, socially distanced of course.
