Easter is coming and these Rocky roads will help you start the easter fun. Crunchy biscuits with soft marshmallows, topped with chocolate with a sprinkle of mini eggs? Kids love making these and love licking the spoon afterwards and now and then stealing the mini eggs.

Ingredients

100g Milk choc 100g Dark choc 100g Margarine 3tbs Golden syrup 4 Digestive biscuits 1 pack of Mini eggs 50g Marshmallows

Method

  1. Start by lining a baking tray with parchment paper. Break the digestive biscuits into tiny pieces and put them inside the baking tray, followed by marshmallows.
  2. Make a bain-marie by placing a saucepan with hot water on a hob on medium heat. On top of the saucepan put a mixing bowl (make sure the mixing bowl does not touch the water).
  3. Break all of the chocolate inside the bowl as well as the margarine and the golden syrup. Stir occasionally and once all melted and tip inside the baking tray.
  4. Don’t forget to top with mini eggs. Before placing them into the fridge for 2-3 hours or until the chocolate has hardened.
  5. Slice in half and then into 3 even slices each side and serve.
