We thought we would bring South Asia to you, with these incredible tofu satay bites. Made with store cupboard ingredients, these are easy to make and so delicious! You don’t need to be vegan to enjoy these. These tofu bites are best made with tofu that has been frozen, defrosted and pressed (minimum for 1 hour, but the longer the better) beforehand to make sure it is extra firm. The tofu part is a bit of a process but trust me when I say it really is worth it! These are great as a side or double up the recipe to bring to a gathering for the perfect party snack.

Ingredients

Marinade for the tofu 1 Block of defrosted and pressed Tofu 3tbs Oil 1 Shallot 100ml Water 2tsp Turmeric 1tsp ground coriander 1 zest of a Lemon ½ tsp of Salt Satay sauce 3 Heaped tbsp Peanut butter 3 tbsp Sweet chili sauce 150ml Water 2 tbsp Soy sauce (or a gluten-free alternative)

Method

  1. First off, chop the shallot finely and add it to a mixing bowl. Then add the remaining marinade ingredients. Give it a big stir so they are combined.
  2. Take the tofu out of the press and place it onto a chopping board. Cut the tofu into eighths so you have eight even rectangles. Place the tofu into the mixing bowl with the marinade and mix with your hands. Make sure the tofu is completely covered and leave to marinate for an hour.
  3. Next, preheat the oven at 180 degrees 20 minutes before you are ready to cook the tofu. Take out a wire rack and place the tofu on it, making sure they are not touching. Pop in the oven for 20 mins.
  4. Once cooked, take out the tofu and place it onto a plate which you are serving from.
  5. Get a microwaveable bowl and place the sweet chili, peanut butter, and water and mix it together. Pop in the microwave for 20 seconds, take it out, and stir again. Then put back in the microwave for a further 10 seconds and stir. Put the sauce into a ramekin and serve on the side of your tofu.
