Smokey aubergine breakfast sandwich

You will love this delicious smokey aubergine breakfast sandwich!

Many tend to go for the plant-based ‘meat’ opinion, however we are more about using and exploring whole foods in our cooking. We have found that aubergine is incredible for absorbing that all important seasoning, and even has a similar texture to bacon, without the animal cruelty! Aubergine is naturally low in fat as well as full of healthy nutrients. Go on give it a go!

Ingredients

1 Aubergine

4 slices Bread (Can be gluten-free)

2 tbsp Tomato ketchup (optional)

3 tbsp All-purpose seasoning

25ml Olive oil

1 tbsp vegan butter

Method

  1. First, grab a small bowl and mix the oil and the all-purpose seasoning.
  2. Finley slice the aubergine into strips lengthways and place into the bowl with the seasoned oil. Ensure the aubergine is well covered.
  3. Put the frying pan on the hob on a medium heat. Make sure the pan is hot before you add the aubergine and start frying them.
  4. Meanwhile, spread vegan butter onto the slices of bread and add a dash of ketchup.
  5. Once the aubergines are golden on each side, add to the bread and complete your delicious sandwich.
